How To Make Rowan Berry Wine

Homemade Wine Recipe




Ingredients: Rowan Berry Wine


8 pints berries from Rowan / Mountain Ash tree - ripe, but not spoiled
4 lbs / 1,800 grams sugar
1 teaspoon acid blend
1/4 teaspoon tannin (or cup of black tea)
Wine yeast
1 teaspoon yeast nutrient / energiser
8 pints / 1 gallon boiling water
1 campden tablet

Method - What to Do


Wash berries and remove all stems. Add the rowan berries to a clean winemaking fermentation container and mash roughly. Add boiling water to the rowan berries, together with the other wine ingredients. However, do not add the wine yeast until the water has cooled to room temperature.

Stir the fermenting rowan berry wine several times each days for four days and then strain, ensuring that all of the juices are squeezed out of the fruit. Pour the fermenting wine 'must' into a suitable demijohn and fit an airlock. At this stage the rowan berry wine should be fermenting and bubbling strongly. At six weeks, rack for the first time, and then again at four months and eight months. When the rowan berry wine has reached maturity (one year old), bottle and leave for up to one year.
