Clean the rhubarb but do not peel and chop into short lengths. Pour cold water over the rhubarb and then strain off the liquor. An alternative way to extract the juice is to freeze the rhubarb first. Put the liquid into a bucket and add the sugar and stir vigorously to dissolve the sugar. Add the lemon juice and yeast and yeast nutrient. Cover the bucket with a lid and leave for four days, stirring daily. Pour into a demijohn and fit an airlock and leave for around three months.
When fermentation has ceased, rack the wine into a clean jar and place in a cooler environment and leave for a further few months. Rack again if necessary and leave until the wine is clear and stable and then bottle.
