How To Make Quince and Apricot Wine

Homemade Wine Recipe




Ingredients: Quince and Apricot Wine


2 lb / 900 grams quinces
1 lb / 450 grams dried apricots
1 lb / 450 grams fresh bananas (including skins)
3 lb / 1,350 grams sugar
1/2 pint strong black tea
1/2 oz / 14 grams citric acid
Pectin enzyme
Water up to 1 gallon
Yeast nutrient
Wine yeast

Method - What to Do


Grate the quinces and simmer for 15 minutes but do not boil. Place the chopped fruits and sugar into a fermentation bucket and add the quince pulp and liquor. Stir well to dissolve the sugar. When cool add the pectin enzyme, citric acid, strong tea and yeast nutrient. Add the wine yeast, cover and leave for seven days in a warm place, stirring daily. Strain through a fine sieve and put into a demijohn and fit an airlock to seal the jar.

Store in a warm place and allow the fermentation to work. When fermentation has ceased, rack the wine into a clean jar and place in a cooler environment and leave. When the wine is clear and stable siphon into bottles.
