Winemaking Method: Pea Pod Wine - Wine Making Guides
Zest and juice the lemons, taking care not to include the white pith. Wash and boil all of the pea pods, together with lemon juice, lemon zest and also the chopped ginger. Strain mixture when pea pods begin to soften and allow to cool in the winemaking fermentation bucket.
Add the sugar, stirring well until it has completely dissolved. At this stage, also add the wine yeast, yeast nutrient, tannin and pectic enzyme. Ferment pea pod wine mixture in bucket for around three days, stirring well twice a day.
Transfer to sterilised demijohn and add airlock. Rack pea pod wine after two months, and then again two more times and three monthly intervals. Bottle wine at one year old and stand for up to one year before drinking.
