(Maize Wine Recipe)

Winemaking Ingredients: Maize Wine - Wine Making Guides
1 pint maize
2 lb / 900 grams raisins
4 lb / 1,800 grams sugar
2 lemons
1 orange
Water up to 1 gallon
Yeast nutrient
Wine yeast

Winemaking Method: Maize Wine - Wine Making Guides
Soak the maize overnight and then crush maize in a mincer or food processor. Put in a fermentation bucket with the chopped raisins, thinly peeled lemon peel, fruit juices and sugar. Pour over the boiling water and stir vigorously to dissolve the sugar. Cover and when cool add the yeast nutrient and wine yeast and cover and leave for three weeks in a warm place, stirring daily. Strain through a fine sieve and put into a demijohn and fit an airlock to seal the jar.

Store in a warm place and allow the fermentation to work. When fermentation has ceased, rack the wine into a clean jar and place in a cooler environment and leave. When the wine is clear and stable siphon into bottles.
