(Lemon and Ginger Cordial Recipe)

2 ints / 1,200 ml water

Lightly bruise the ginger, to relase the flavours and fragrance. Wash and slice the lemon, and add both the lemon and ginger to a saucepan, taking care not to waste any precious lemon juice. Pour in the water and boil for between 45 minutes and one hour. Remove from the heat and stir in all of the sugar, until completely dissolved.
Allow to cool gradually and when the liquid has reached room temperature, bottle and store in a cold place, away from any direct light.
