How To Make Ginger Beer
Ingredients: Ginger Beer
1 1/2 lb / 750 grams sugar
8 teaspoons of sugar (additional)
8 teaspoons ground ginger
3 pints / 1,700 ml of water
2 large lemons
1/2 oz / 15 grams brewer's yeast
Method - What to Do
Mix together 3/4 pint / 450 ml of warm water, two teaspoons of ground ginger and two teaspoons of sugar, along with the yeast. Stir this mixture and pour into a plastic or glass container, covering and leaving in a warm place for 24 hours. For the next six days, mix in one teaspoon of ginger and one teaspoon of sugar on a daily basis, strirring each time.
After this seven-day period, strain the ginger beer mixture through a fine, plastic sieve. Add the remaining water, sugar and the juice of the two lemons. Mix well and bottle, using suitable screw-top bottles. Leave for a week or two to mature and then served chilled, with a sprig of mint.
