8 to 10 flower heads
2 sliced lemons
8 pints / 1 gallon water
1 1/2 lbs / 680 grams sugar

Put the elderflowers and sliced lemons into a fermentation bucket and add the water. Leave to soak for 24 to 36 hours. Using a fine sieve, strain the liquid and add the sugar and citric acid.
