1 lb / 450 grams freshly picked elderberries
1 lb / 450 grams brown sugar

Of note, 'rob' is simply the old-fashioned name for cordial.
Wash the elderberries gently, taking care not to squash the fruit. When washed, add to a saucepan and mash to release the juices and colour. Mix with the sugar and gently simmer, until the mixture has the same consistency as a thick syrup and all of the sugar has completely dissolved. Pass the cordial mixture through a fine seive and then pour into bottles.
Store in a cool place and dilute to drink, using either cold or hot water. This rob should last for at least 12 months. Once a bottle is opened, it is best to then store it in a fridge.
