2 lb / 1,000 grams ripe elderberries
2 lb / 1,000 grams ripe blackberries
3 lb / 1,500 grams sugar
8 pints / 1 gallon water
1/4 oz / 10 grams wine yeast

Place the elderberries and blackberries into a clean fermentation bucket and mash, so that the juices of the fruit begin to flow freely. Pour on four pints of boiling water and stir thoroughly. Once cooled, strain through a fine sieve or through muslin. Add the sugar, the remaining water and the yeast, which should have first been activated separately. Leave to ferment for three days (stirring daily) and then pour into a demijohn. Seal with a suitable airlock and leave untouched for six months. Once clear, bottle and store for a month or two before drinking.
