(Dandelion and Fig Wine Recipe)

Winemaking Ingredients: Dandelion and Fig Wine - Wine Making Guides
2 / 3 quarts dandelion flower heads - without calyx
2 lb / 900 grams dried figs
3 lb / 1,350 grams sugar
1/2 oz / 14 grams citric acid
1/2 pint strong black tea
Water up to 1 gallon
Yeast nutrient
Wine yeast

Winemaking Method: Dandelion and Fig Wine - Wine Making Guides
Boil the flower heads and leave for one hour to infuse. Strain the liquid on to sugar and chopped figs. Stir well to dissolve the sugar. When liquid is cool add the citric acid, strong tea, yeast nutrient and wine yeast. Cover and leave to ferment for five days, stirring daily. Strain into a demijohn and fit an airlock to seal the jar.

Store in a warm place and allow the fermentation to work. When fermentation has ceased, rack the wine into a clean jar and place in a cooler environment and leave. When the wine is clear and stable siphon into bottles.
