(Currant Wine Recipe)

Winemaking Ingredients: Currant Wine - Wine Making Guides
2 lb / 900 grams minced currants
1 1/2 lb / 680 grams sugar
3 teaspoons citric acid
1/2 pint strong black tea
Wine yeast
Yeast energizer

Winemaking Method: Currant Wine - Wine Making Guides
Place currants in a fermentation bucket and cover with boiling water. Stir vigorously to pulp the fruit. Add the sugar and stir well to dissolve. When cool add the strong tea, citric acid, yeast energizer and wine yeast and cover and leave for three days, stirring daily. Strain into a demijohn and fit an airlock to seal the jar.

Store in a warm place and allow the fermentation to work. When fermentation has ceased, rack the wine into a clean jar and place in a cooler environment and leave. When the wine is clear and stable siphon into bottles.
