1 lb / 450 grams barley
2 lb / 900 grams dried apricots
1 lb / 450 grams raisins
1/2 pint strong black tea
3 lb / 1,350 grams sugar
2 lemons
Water up to 1 gallon

Wine yeast
Winemaking Method: Barley and Apricot Wine - Wine Making Guides
Soak the barley overnight and then mince with the dried fruits. Place into a fermentation bucket with the sugar and pour on the boiling water, stirring vigorously to dissolve the sugar. When cool add the lemon juice, strong tea, yeast nutrient and wine yeast. Cover and leave to ferment for seven days stirring daily. Using a fine sieve strain the liquid into a demijohn and use an airlock to seal the jar.
Store in a warm place and allow the fermentation to work. When fermentation has ceased, rack the wine into a clean jar and place in a cooler environment and leave for a further few months. When the wine is clear and stable siphon into bottles.
