4 lb / 1,800 grams artichoke tubers
1 orange
1 lemon
2 1/2 lb / 1,100 grams sugar
1/2 lb / 225 grams raisins
Yeast nutrient

Slice the artichokes and chop raisins and boil for 30 minutes. Strain the liquid into a fermentation bucket over the sugar, stirring vigorously to dissolve. When cool add the orange and lemon juice, yeast nutrient and wine yeast. Cover and leave to ferment for three days stirring daily. Using a fine sieve strain the liquid into a demijohn and use an airlock to seal the jar.
Store in a warm place and allow the fermentation to work. When fermentation has ceased, rack the wine into a clean jar and place in a cooler environment and leave for a further few months. When the wine is clear and stable siphon into bottles.
