1 lb / 450 grams dried apricots1 lb / 450 grams raisins
1 lb / 450 grams dried figs
2 oz / 56 grams dried bananas
2 1/2 lb / 1,100 grams sugar
1/4 oz / 7 grams citric acid
1/2 pint strong black tea
Water up to 1 gallon
Yeast nutrient

Chop the apricot fruits and place in fermentation bucket together with the sugar. Pour on the boiling water and stir vigorously until the sugar is dissolved. When cool, add the strong tea, citric acid, yeast nutrient and wine yeast. Cover and leave to ferment for seven days stirring daily. Using a fine sieve strain the liquid into a demijohn and use an airlock to seal the jar.
Store in a warm place and allow the fermentation to work. When fermentation has ceased, rack the wine into a clean jar and place in a cooler environment and leave for a further few months. When the wine is clear and stable siphon into bottles.
