How To Make Raspberry Wine

3 lb / 1,500 grams raspberries
2 1/2 lb / 1,250 grams sugar
8 pints / 1 gallon cooled, boiled water
1/4 oz / 10 grams wine yeast

Pick the raspberries when fully ripe and dry, adding them to the fermentation bucket and mashing them slgihtly. At this stage, pour on the boiling water and cover well. When cooled, mix in the sugar and the activated yeast. Leave for around five days, and stir a minimum of two times every day. Strain the raspberry mixture into a demijohn, add an airlock and allow the yeast to work out. When placed in a warm spot (such as an airing cupboard), the yeast should work itself out in just two or three months, after which time you can siphon straight into bottles. This raspberry wine can then be enjoyed immediately, as a very refreshing winter drink, perfect for serving warmed with mulled spices.
